Ginza KAGARI White Chicken Soup Soba: 

This renowned restaurant, awarded the Bib Gourmand in the Michelin Guide 2016 and 2017, has its flagship store in Ginza where long queues are common. The interior features warm hinoki cypress wood, creating a clean and refined atmosphere akin to a high-end Japanese ryotei, welcoming female diners with ease. Its Ginza location and Michelin recognition attract many international visitors. The brand has now expanded to Sapporo and Osaka, spreading its acclaimed flavors nationwide.
Using domestically produced brand-name chicken with 100% meaty chicken bones and whole chickens in large quantities, the soup, simmered for a long time with pure water only, brings out plenty of chicken umami. It has a rich flavor yet a smooth finish without any roughness. The original "salt seasoning," combining mineral-rich natural salt with flavors of seafood, kelp, and shiitake mushrooms, stands out with a mellow taste. The creamy soup, akin to potage, remains delicious until the end, reminiscent of a hot pot experience.

Rich broth made with original blended miso,complemented by selected chili spices& Sichuan pepper oil.

[How to cook]
1.Boil 450ml of water in a pot.
2.Add the noodles and boil for 2 minutes 30 seconds over medium heat.
3.Turn off the heat, add the soup and stir well.
4.Move the noodles and soup to a bowl and add toppings as you like.
