This is an authentic Hiroshima ramen that is easy to prepare. Nearly 30 years ago, with the aim of creating a specialty noodle that highlights the characteristics of Hiroshima, the researchers at the Hiroshima Prefecture Food Industry Technology Center, led by Mr. Hirata, began fundamental research. Two years later, Hiroshima ramen was born as a local specialty noodle.
The noodles are kneaded with a high water content, which enhances the characteristics and flavor of the wheat flour. They are then aged and slowly air-dried to produce a firm, less chewy noodle with a smooth texture.
The soup is designed to bring out the umami of seafood, while also achieving a balanced pork bone soy sauce flavor that bridges the taste profiles of Kyushu's pork bone ramen and Kanto's soy sauce ramen.
Hiroshima ramen, blessed by the sea, mountains, and rivers, is a ramen with a distinctive taste that leaves you wanting more after you’ve finished.
