This “Kamatama Chuka Soba” comes from Napoleonken in Tokyo, created by Kazunori Komiya, the founder of the famous tsukemen shop TETSU. Wanting to make a bowl where the noodles are the true star, he arrived at this simple yet addictive menu: a rich pork-soy sauce tossed with hot, freshly cooked noodles.

The thick, straight noodles have a satisfying bite and chewy texture, designed to be coated in the flavorful pork fat and soy-based sauce rather than served in a large volume of broth. Every strand picks up the umami of pork, soy sauce and bonito powder, giving you a concentrated “ramen meets pasta” style experience in each mouthful.

[How to Prepare (Basic Guide)]

  1. Bring plenty of water to a boil in a pot.

  2. Add one portion of noodles and cook according to the time indicated on the package, adjusting for your preferred firmness.

  3. While the noodles cook, warm the sauce packet in hot water if desired.

  4. Drain the noodles well (do not dilute the sauce with too much water).

  5. Place the hot noodles in a bowl, add one packet of sauce, and mix thoroughly so the noodles are evenly coated.

  6. Add your favorite toppings such as egg (for a “kamatama” style finish), sliced pork, green onions, nori, or vegetables if desired.

We ship nationwide to all 50 states. We cannot ship to PO box addresses because our products are perishable.
