This product is created with a health-conscious approach, without using any additives, colorants, or chemical seasonings.

Commitment to Noodles

The noodles are made using the traditional method from the Taisho era (cutting fresh noodles and drying them like somen). The shape of the noodles during drying is registered as "Tori-shi's unique Tori-shi hanging."

The ingredients include high-quality wheat flour, salt, and delicious underground water from the local Fukuoka and Ukihata regions.

Craftsmen adjust the temperature and humidity while carefully aging and drying the noodles for 3 days (approximately 60 hours), depending on the noodle condition and weather.

After being aged, the noodles are removed one by one from the drying rack based on the level of dryness, resulting in noodles with the natural aroma of wheat, rich flavor, and a firm texture.

Commitment to Soup

The soup is made with carefully selected brewed soy sauce and sesame oil. It is seasoned with bonito extract and kelp extract, creating a refreshing chilled Chinese noodle soup with a mild sourness and clean sweetness.
