【Commitment to Noodles】
The noodles are made using the traditional method from the Taisho 7 era (cutting fresh noodles and drying them like somen). The shape of the noodles during drying is patented as "Torishi Kake," a unique technique by Torishi Shoten.
The ingredients include high-quality wheat flour, chili pepper, salt, and delicious underground water from the Fukuoka-Ukihata region.
Craftsmen carefully adjust the temperature and humidity, comparing the noodle state and weather, and age the noodles for 3 days (about 60 hours) through slow drying.
The aged noodles are carefully removed from the drying racks, preserving the original wheat fragrance, deliciousness, and a firm texture.
【Commitment to Soup】
For the soup, we carefully select brewed soy sauce and sesame oil, and adjust the flavor with bonito and kelp extracts. This results in a refreshing cold Chinese noodle with a smooth, tangy flavor and a clean sweetness.
