Noodles and Craftsmanship

Considering everyone's health, this product is made without any additives, colorants, or chemical seasonings, making it a health-conscious product.

Commitment to Noodles

Since its establishment in the 7th year of Taisho, we have been making noodles using traditional methods (cutting fresh noodles and drying them like making somen).

The shape of the noodles during drying is registered as the "Torishi-kake" unique to Torishi Shoten.

The raw ingredients used are high-quality domestic wheat flour, salt, and delicious underground water from the local Fukuoka and Ukihara region.

Our artisans carefully observe the shape of the noodles and the weather conditions, adjusting the temperature and humidity. The noodles are then slowly aged and dried over 3 days (about 60 hours).

After being aged, the noodles are removed one by one from the drying rack, confirming the dryness level, and finished to create noodles with the original wheat aroma, flavor, and elasticity.

Commitment to Soup

Kurume is known as the birthplace of Kyushu tonkotsu, and the base of the soup is a traditional light tonkotsu flavor, made rich and sweet with depth.
