Commitment to Noodles

Since its establishment in Taisho 7 (1918), we have been making noodles using traditional methods (cutting fresh noodles and drying them like making somen). The shape of the noodles during the drying process is uniquely registered as "Tori-shi Kake" by Torishi Shoten.

The ingredients used include high-quality wheat flour, salt, and delicious underground water from the Fukuoka/Ukibe region. Craftsmen carefully monitor the noodle shape and weather conditions, adjusting temperature and humidity, and allowing for a slow, three-day (approximately 60 hours) fermentation drying process.

These matured noodles are checked for their drying consistency and individually removed from the drying rack, resulting in noodles with the natural aroma, flavor, and chewiness of wheat.

Commitment to Soup

The soup is made by blending rice miso and soybean miso, and using brewed soy sauce with a second fermentation process, enhancing the umami of the miso.

All genetically modified crops used are segregated.
