【Noodle Craftsmanship】
Since its founding in 1918, the company has been making noodles using traditional methods (cutting fresh noodles and drying them like making somen noodles).
The drying method and shape of the noodles have been patented as "Torishi Shop's unique Torishi-hanging" design.
The noodles are made with high-quality wheat flour, salt, and delicious underground water from the Fukuoka・Ukihata area.
Artisans carefully adjust the temperature and humidity based on the shape of the noodles and weather conditions, slowly aging and drying them over three days (about 60 hours).
The matured noodles are individually removed from the drying racks after confirming the dryness, resulting in noodles with the natural aroma, umami, and chewiness of wheat.
